Aviyal a traditional dish of South Indian cuisine rather more popular in Kerala is a pure vegetarian treat. This perfect vegan dish , is a mixture of vegetables of choice and the preparation method may vary with region. It is served with boiled rice.

PREPARATION TIME : 25 minutes, serves 4-5

Aviyal …. the veggie treat

INGREDIENTS

  • Potato (medium size) 1
  • Beans 3
  • Onion 1
  • Raw Banana 1
  • Yellow Cucumber small 1
  • Carrot 1
  • Turmeric powder ¼ tsp
  • Green Chilli 3
  • Shallot 10
  • Tomato (small sized) 2
  • Water
  • Coconut grated 1
  • Cumin seeds 10
  • Garlic 1 small clove
  • Ginger small piece
  • Green Chilli 3
  • Turmeric powder ¼ tsp
  • Tamarind extract 1 tsp
  • Coconut oil 1 and ½ tsp
  • Curry Leaves and Salt to taste

INSTRUCTIONS

Chop the vegetables. In a shallow pan add potatoes, raw banana, onion, carrot, beans, cucumber , ¼ tsp turmeric powder and water and cook covered on low flame for 10 minutes. The vegetables should be added according to their cooking time in order to avoid getting mashed. Add shallots, green chilli and tomato and curry leaves and cook covered for five more minutes just al dente. The vegetables should not go overcooked as it may get mashed out. In meantime slightly grind the second ingredients and set aside. Please be careful not to over grind. Add this to cooked vegetables and put on high flame so that the water dries. Add salt to taste and tamarind extract and turn off the flame. Sprinkle the coconut oil and cover it with lid so that the flavour stays in. Serve hot.

TIPS

Drumsticks, ash gourd, snake gourd, yam all add taste to the dish. For those who do not want tamarind extract can substitute with raw mango or yoghurt.
