Ingredients

- Sugar 3 Tbsp
- Corn starch 1/3 tsp

- Crackers/ Digestive 6-10 (depending on size)
- Sugar 2 Tbsp

- Cream Cheese 200 gm
- Fresh Cream 1 small tin
- Sugar ΒΌ cup
- Egg 1
- Lemon extract Β½ tsp
- Vanilla essence 1 tsp
Method of preparation
Puree Strawberries, 3 Tbsp sugar and heat the mixture on very low flame stirring. When it start to vapour, add in cornstarch and let it boil for two minutes stirring to avoid lumps and put off the flame and set aside to cool.

Combine together the Crackers/ Digestive, butter( room temperature) and sugar. Spread it evenly as the base into a baking tray.

In a blender, pulse together the third set of ingredients. Do not over blend. Add in 3 tsp of puree and pulse it again.

Now pour the blended mixture over the base and immediately bake on medium setting for 15 minutes checking in between whether the top has turned firm. Do not preheat the oven. Remove from oven and let it cool.
Spread the strawberry puree over cheesecake once it’s cool and then refrigerate. Enjoy the home made delicious Cheesecakeπ
- Notes:
- The strawberries can be replaced with your choice of fruit like blueberry, mango etc… for the respective cheesecakes.
- Full fat cream cheese yield best results.
- Graham Crackers is the best choice though digestive also tastes good.
