Easter Eggs

This easily prepared evening tea time snack is really delicious and serves your impromptu guests.

Ingredients

eggs 3

Onion small size 1/2

ginger/ garlic paste 1/4 tsp

black pepper powder I/4 tsp

Garam masala Pinch

green chilli finely chopped 1/2 tsp

oil 3/4 tbsp

salt to taste

water to boil eggs

oil to fry

Preparation

Boil two eggs and keep it aside. In a skillet add oil and sauté finely
chopped onions, green chilli and ginger/garlic paste adding in sequence. Once
its translucent.Add garam masala, pepper and add in salt to taste and mix well.

Transfer the boiled eggs to cold water and once the eggs are cold remove the shell off gently. Cut the eggs into two halves and and carefully scoop out the yolk without breaking the white part. Mash it with a spoon and mix well with the sautéed onion and add salt to your level and just thaw it for half a minute on low flame.

Now refill the masala mixed egg yolk inside the white and level it smooth. In a bowl take one egg and whisk it gently. In a shallow frying pan add enough oil to fry and put to flame. Once the oil is hot, on low flame take each half eggs and just dip in whisked egg for a covering and immediately fry it to slight brown. Serve it hot for tea with tomato sauce or any dip of choice. Perfectly goes with breads too.
