Christmas, is the time of delight, filled with the hope, peace and joy, bestowed upon mankind. The endless prefixes like Christmas tree, Christmas dress, Christmas season, Christmas dinner, Christmas Eve............list goes on, and not the least "Christmas cakes" inevitable in having every Christmas complete. This serves as prelude to the upcoming feast and fast breaking for Christians. Delicious cakes and dishes made my Mom and the way my Dad liked it, remain as my fond memories.....
- All purpose flour. 250 gm
- Butter. 200 gm
- Ghee. 50 gm
- Sugar. 250 gm
- Eggs. 4
- Baking powder. 2 tsp
- Baking soda. 1/2 tsp
- Vanilla essence. 7 ml
- Dry black grapes. 100 gm
- Raisins. 100 gm
- Cashew nuts 150 gm
- Dry orange peel.
- Caramel
Finely chop the dry nuts and fruits, pitting out any seeds, adding the dry grated orange peel. Drizzle a pinch of flour and keep it aside.

Powder the sugar and blend together the butter and ghee in mixing bowl on medium speed. Add in the eggs at one at a time and blend together in medium settings until well incorporated.

Sieve in the flour and baking powder, baking soda. Add the prepared caramel in required colour and fold in the dry fruits, adding the vanilla extract.
Incorporate well and add to the greased baking tray. Bake at 180 C in a preheated oven. remove the cake from oven once an insert (toothpick) comes out clean. Baking time is about 60 minutes, but check in between as to the settings of your oven, adjusting the temperatures accordingly.
*Orange peel is dried and preserved earlier, & added customizing to the taste.
*Caramel can also be prepared and added in amount of individual preference.
