Cranberry Easy Cake

The festive Cranberry Cake, easily prepared, serves perfect to tea, with its melting taste, satisfies your cravings.

Flour 1.25 cup

Granulated sugar 1 cup (1/4 white+ 3/4 brown)

Butter. 75 gms

Egg 2

Butter milk 75 ml

Vanilla extract 1 tsp

Cranberry dry. 60 gms

Sugar 2 Tbsp

Orange peel 1/2 tsp

Lemon extract 1/2 tsp

Water 2 Tsp

Baking powder 1 tsp

Baking soda 1/4 tsp

Add 2 Tbsp sugar to the dry cranberry and gently on low flame prepare slight caramelised concentrate adding water and the lemon extract and keep aside to cool.

Sieve together flour, baking powder, and baking soda. In the mixing bowl, blend powdered sugar and butter, adding in the eggs, buttermilk, 1 teaspoon of prepared cranberry concentrate. Fold in the flour mixture, orange peel, vanilla essence,lemon extract and incorporate well. Transfer to greased baking tray and bake at 180C initially. Once the cake starts to rise add the remaining cranberry concentrate on the top and continue baking. Lower the temperature once the cake is fully risen. Bake time is around 30 minutes, slightly varying depending on the baking tray as well as the oven. Remove from oven once the insert comes out clean.
